i happened to be on the horse when i was attacked and the horse actually hit back was this a glitch because i cant attack from its back by clicking on the enemy?

That's normal among mounts. You can only manually attack with Battle Mounts such as Tigers and Dragons.

If you cancel the creation screen and open it again, will the colors change?

There is not a creation process, you use the whistle, and after entering the pets name, the horse appears.
